2 tbsp sesame oil
1 carrot, finely sliced
200g pak choi, washed and sliced
2 scallions, sliced on the diagonal green end only
300g straight-to-wok rice noodles
150g cooked shrimp
2 tbsp soy free seasoning sauce, plus extra to serve
1 tbsp sesame seeds, toasted
1 red chili, sliced, to serve (optional)
Serves - 4
Heat 1 tbsp sesame oil in a large wok or frying pan over a medium-high heat and toss in the carrot.
Cook for a few mins until starting to soften and brown, then add the pak choi and scallions.
Add the noodles and shrimp, use tongs to combine, and warm through.
Pour in the soy free seasoning sauce and remaining sesame oil, and toss to coat.
Just before serving, scatter over the sesame seeds and chili. Serve with extra soy free sauce, if you like.
