1kg King Edward or Maris Piper potatoes, peeled and cubed
2 tbsp garlic infused oil
100ml lactose/dairy free milk
2 tbsp extra virgin olive oil
small pack basil, chopped, reserving a few leaves to serve
Boil the potatoes in salted water until tender. Drain, return to the pan and steam dry for 1 min, then mash with the garlic oil, lactose free milk, oil and basil. Season and serve, scattered with a few basil leaves.
