2 tbsp olive oil
1 tbsp mirin
1 lime, zest and juice
1 tsp fish sauce (optional)
2 red chili, seeds left in and finely chopped
12-20 large raw shrimp
1 tbsp chopped cilantro (optional)
Serves - 4
Heat the oil in a frying pan. Add the chili, then fry for 1-2 mins until starting to turn golden.
Turn up the heat, throw in the shrimp and fry for a few mins, stirring, until all the shrimp turn pink.
Take off the heat, season and stir in the fish sauce, mirin, lime juice and lime zest.
Continue to cook briefly, until the shrimp are coated in a sticky sauce.
