Ingredients


For the cupcakes

150g lactose free butter

150 g Caster Sugar

3 Eggs

½ tsp Vanilla Extract

150 g Gluten Free Self Raising Flour

1 tbsp lactose free milk

24 Paper Cake Cases

For the frosting

75 g Icing Sugar

4-5 strawberries

50g lactose free butter

To serve

100g strawberries



Method


Beat together 150g lactose free butter and sugar until light and fluffy. Beat in eggs and vanilla.  Beat in the gluten free flour and lactose free milk.

Spoon the mixture into paper cake cases standing on a baking tray. Bake in a pre heated oven for 10/12 minutes.

To make the topping, in a food processor mix together the icing sugar, lactose free butter and just enough strawberry to make a stiff icing. Spread the icing over top of the cakes. Top with a strawberry.
