400g pack oven-roasted vegetables*
1 tbsp chili paste
1 tsp paprika
1 tsp ground cumin
1 tsp sugar
1 tbsp tomato puree
1 can chopped tomatoes
1 ready-to-eat mixed grain pouch
*Most ready mixes contain onion which will need to be removed. If you are not sure simply use a mix of zucchini, red pepper, eggplant or click here to check
Serves - 4
Heat oven to 200C/180C fan/ gas 6. Cook the vegetables in a casserole dish for 15 mins.
Tip in the chili, spices, sugar, puree and tomatoes, season, and cook for another 10-15 mins until piping hot.
Heat the pouch in the microwave on High for 1 min and serve with the chili.
