85g/3oz quinoa

500ml/16¾fl oz boiling water

1 lemon, juice and zest

handful chopped oregano, basil and mint

black olives, chopped

Cardamom olive oil, to drizzle

Serves - 4


Place the quinoa in a bowl and cover with boiling water.

Leave to stand for 10-15 minutes until all the water has soaked in and the quinoa has swollen up.

Add the lemon juice and zest. Add the herbs and olives.

Mix in about 2 tbsp cardamom olive oil and mix using a fork, until fluffy.

Transfer to a serving dish and top with a slice of lemon and serve .
