4 lamb cutlets

For the crust

1 slice of gluten free bread, toasted

handful of fresh mixed herbs (parsley, mint, basil)

80g/3oz parmesan, finely grated

salt and pepper to taste

1 tbsp mustard

Serves - 4


Preheat the oven to med/high. Tip all the crust ingredients into a processor and blitz briefly.

Brush the lamb with mustard, then cover with the gluten free herb crumb.

Cook the lamb cutlets in the oven for 15-20 mis, until cooked to your own personal taste.

Remove from the oven and allow to rest for five to ten minutes.
