30g/1¼oz gluten free breadcrumbs
30g/1¼oz parmesan cheese
handful fresh parsley, chopped
1 tbsp garlic infused oil
150g/5¼oz salmon steak
Serves - 1
Place the gluten free breadcrumbs, cheese, parsley and garlic oil in a food processor and blend until combined. The mixture should form fine crumbs.
Coat the top of the salmon with the crumbs and bake in the oven for ten minutes or until the salmon is cooked through and the crumb is golden and crisp.
Serve with green salad on a plate topped with the salmon.
