3 nests medium rice noodles

1 handful spinach

1 tbsp olive oil

1 red pepper, sliced

1 carrot, shredded

100g sliced green beans

300g prawns

For the sauce

2 tbsp tomato ketchup

1 tbsp maple syrup

1 tsp minced ginger

½ five spice

1 tsp garlic infused oil

1 tbsp soy free seasoning sauce

Serves - 4


In a pan, mix all the sauce ingredients together.  Heat gently for 5-10 minutes until well combined, then set aside.

Cook the noodles, according to packet instructions adding the green beans to soften.

Drain and set aside. Heat the oil in a large frying pan or wok and fry the pepper for 3 mins, until starting to soften.

Tip in the noodles and vegetables along with the prawns and toss together. Add the sauce ingredients and heat everything through for 2-3 mins, until piping hot.
