For the quinoa burger

2 tbsp vegetable oil

120g/4oz rice flour

360g/12oz pre-cooked quino

60g/2¼oz vegetarian parmesan style or feta cheese

pinch salt

pinch cumin powder

1 tsp chopped fresh chives

1 tsp chopped fresh parsley

1 carrot, grated

2 free-range eggs, beaten

120g/4oz gluten free breadcrumbs

vegetable oil, for frying

To coat

2 tbsp rice flour

2 tbsp gluten free breadcrumbs

1 egg beaten

For the serve

gluten free burger buns

1 round lettuce, washed and leaves separated

¼ cucumber, chopped

3 plum tomatoes, chopped

Serves - 4


For the quinoa burger, simply mix all the ingredients together. Mix and season with salt and cumin to taste.

Shape the quinoa into burger patties 90g/3¼oz each. Put the rice flour, beaten egg and gluten free breadcrumbs into three separate bowls.

Coat each burger in flour, then beaten egg and finally coat in breadcrumbs.

Place in the fridge for 45 minutes. Gently fry the burgers for 5-10s until crispy and golden, serve in gluten free buns with salad.
