300g ready to eat quinoa

2 egg, beaten

4 tbsp gluten free breadcrumbs

1 small zucchini, grated and moisture squeezed out

3 tbsp lactose free yogurt

85g feta cheese, cut into 1cm cubes

1 tbsp chives, finely chopped

2 tbsp sunflower oil or vegetable oil

Serves - 4


Add the quinoa into a bowl. Add the egg and lactose free yogurt and mix well. Season, then fold through the remaining ingredients (except the oil).

Divide the mixture into 4 and shape into burgers. Heat the oil in a non-stick frying pan, then cook the fritters over a medium heat for 3 mins on each side until golden. Serve with a green salad.
