¼ cucumber, diced

1 large carrot, peeled and cut into small dice

½ yellow pepper

½ red pepper

1 tomato, diced

salt and freshly ground black pepper

small bunch parsley, coriander or mint, finely chopped

1 pack ready to eat quinoa

For the dressing (optional)

1 tbsp olive oil

½ lemon, juice and zest only

1 orange, juice only

½ tsp ground cardamom

Serves - 2


Mix the dressing and set aside, before preparing the vegetables.

Heat the quinoa, as instructed by the package.  Mix the vegetables and dressing together and serve.
