Ingredients


2 tbsp olive oil

1 carrot, sliced

1 stalk celery, sliced

1 small zucchini, diced

1 small eggplant, diced

200g diced pumpkin (skin removed, deseeded)

4 tbsp low FODMAP curry paste

1l lactose free milk

175g quinoa, rinsed

1 handful chopped coriander








Method


Heat the oil in a pan and add the curry paste, gently fry for 2 mins then add all the vegetables.

Fry gently for another 10 mins then add 1 cupful of water and bring to the boil.  Meanwhile, heat the lactose free milk in a jug in the microwave.

Add the quinoa, then stir in the lactose free milk. Bring to the boil, simmer gently for 10 mins until the quinoa is cooked. Check seasoning, top with chopped coriander, then serve.
