170ml/6fl oz boiling water
80g/3oz caster sugar
zest and juice of two lemons
4-5 puréed strawberries passed through a sieve
3 tbsp sauternes, chilled
1 star anise
1 smallish stick cinnamon
Add the water to a pan and allow to simmer. Add the sugar and continue simmering for 5-7 minutes, adding the star anise, cinnamon and lemon juice. Remove from the heat and place the pan in iced water to cool.
Remove the anise and cinnamon and add the lemon zest to the cooling liquor. Churn, slowly adding the strawberry purée and sauternes.
