325g mixture grilled eggplant & zucchini

1 red or yellow pepper sliced

300g grated mozzarella

75g tomatoes, chopped

2 gluten free pizza bases or gluten free pitta

Serves - 2


Heat oven to 200C/180C fan/gas 6. In a roasting tin, season the vegetables and toss with seasoning, then roast in the oven for 15 mins, until hot.

Put the gluten free pizza bases on a baking sheet and top with the chopped tomatoes, then grilled vegetables and finally the mozzarella.

Transfer to the oven and cook for 15 minutes, or until the mozzarella is melted.
