2 slices gluten free bread, cut on the diagonal
1 tbsp sesame seeds
2 large raw shrimp, peeled and de-veined
½ red chili, finely chopped
½ tsp chopped fresh coriander
½ tsp toasted sesame oil
Vegetable oil to fry
Serves - 2
Heat oil in a pan until a small cube of bread browns quickly when dropped in.
Put the gluten free bread and sesame seeds aside, then place the remaining ingredients into a mini food processor and blend until smooth.
Spread the bread with the shrimp mixture and then sprinkle the sesame seeds onto the shrimp mixture.
Cut the gluten free bread slices into triangles, then shallow fry until crisp, brown and golden.
