Ingredients


75g blue cheese

4 tbsp lactose free double cream

½ cucumber, sliced

100g baby leaf spinach

1 tbsp walnut pieces*

*do not exceed


Serves - 2









Method


Mash the blue cheese, lactose free double cream and some seasoning in a bowl with 50ml water until smooth and pourable.

Put the spinach onto a serving plate, scatter over the walnut pieces, cucumber and drizzle with the blue cheese dressing.
