550g new potatoes, scrubbed
200g/8oz strawberries halved
125g bag baby salad leaves
For the dressing**
¼ cup balsamic vinegar
2 teaspoons dark brown sugar, optional
½ teaspoon salt
½ teaspoon freshly ground black pepper
¾ cup olive oil
** we have provided a general balsamic dressing, there is far too much dressing for this salad alone, simply use what you need and reserve the rest.
Serves - 4
Cook the potatoes in boiling salted water for 10-15 minutes until tender.
Gently toss the strawberries, feta, blueberries, potatoes and spinach together.
For the dressing, put all the ingredients in a blender or food processor and blitz until really smooth. Season with salt and pepper.
To serve, toss the salad leaves with a spoonful or two of dressing and arrange on plates.
