125ml/4fl oz lactose free double cream

2 tbsp lactose free yogurt

4 tsp icing sugar

4 large strawberries, mashed

1 ready-made meringue nest

Serves - 4


Whisk the lactose free cream in the bowl until soft peaks form when the whisk is removed.

Whisk in the lactose free yogurt and icing sugar. Stir in the strawberries.

Crush the meringue into the bowl and stir together gently.

Transfer the mixture to a freezerproof container and freeze for at least two hours.

Allow to soften slightly before serving.
