180g/6oz bag Continental salad
½ cucumber, sliced
4 slices turkey
4 slices ham
100g gruyere cheese, cut into batons
4 boiled eggs, peeled and quartered
100g diced tomatoes
For the dressing
3 tbsp pesto - click here for recipe
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Serves - 4
Tip the bag of salad onto a large platter. Prepare cucumber, tomatoes and eggs.
Cut the turkey, gruyere and ham into strips and scatter over the top.
Mix together all the dressing ingredients in a small bowl, then drizzle over the salad just before serving.
