½ bag rooster potatoes (see link)
2 tbsp lactose free butter (melted)
7 thin slices bacon
4oz grated Gruyere cheese
Seasoning to taste
Preheat the oven to 425F. Grease an oven proof dish, and lay the bacon onto the dish. Allow the bacon to overlap the edges.
Wash, peel and then slice the potato. Arrange one third of the potato onto the bacon, then sprinkle with cheese.
Arrange further layers, before folding the bacon over the edges.
Bake uncovered for 50 mins, then test if the potatoes are cooked by piercing them with a knife.
Serve when potatoes are cooked through.
